Enchilada Casserole
Description:
Everyone that has tried this Mexican Casserole really likes it.
Make it HOT: use WHOLE can of green chilies.
Make it MILD: use HALF of can of green chilies.
Ingredients:
1lb. ground beef
1 small onion - diced
1 can cream of mushroom soup
1 can red enchilada sauce - mild
1 SMALL can green chilies - mild
1lb. cheddar cheese - shredded
1 pkg. corn tortillas - cut into small pieces
Directions:
1. Brown ground beef and onions in skillet. Drain grease off.
2. In a bowl, add ALL CANNED ingredients and meat, mix well.
 (USE only 1/2 CAN of green chilies, UNLESS YOU WANT IT HOT!)
3. In a casserole dish layer;
1/2 of meat sauce,
1/2 of corn tortillas,
1/2 of cheese,
repeat layers.
*You can mix everything together, instead of layers, it will taste the same!
4. Cook in HOT oven or microwave until VERY HOT !
Number Of Servings: Make a double batch for more than 4 people.
