Cowboy Sheet Cake
Description:
This is from Teri (T.T.) a friend of mine.
Ingredients:
1 stick oleo
1 cup water
1/2 cup shortening
3 Tablespoons cocoa
2 eggs, well beaten
2 cups flour
2 cups sugar
1/2 teaspoon salt
1 teaspoon soda
1 teaspoon vanilla
Icing
1 stick oleo
3 Tablespoon cocoa
6 Tablespoons milk
1 box confectioners sugar
1 teaspoon vanilla
1/2 cup pecans
Directions:
Mix the Oleo, shortening, water and cocoa.
Using the microwave or stove top, cook until melted. Set aside to cool.
Put the well beaten eggs, flour, sugar, salt, soda and vanilla in a mixing bowl and mix well.
Mix the two mixtures together and pour into a 1 inch deep cookie sheet pan (18 x 13).
Bake at 350 for 20 minutes.
Icing
Place the stick of oleo, cocoa and milk in a sauce pan and heat over low heat, DO NOT BOIL!
Heat until oleo is melted, remove from heat and add sugar. Use electric mixer until smooth.
Then add pecans and vanilla, stir. Pour over HOT cake.
