Mandarin Orange Cake

A relative sent this to me.

I have made this in a bundt pan. I dried additional slices of mandarin orange slices and placed them in the ridges of the bundt cake, sprinkled lightly with powdered sugar...or it can be simply left plain..

Ingredients:

CAKE:
1 box Duncan Hines Yellow Cake Mix
1/2 Cup sugar
3/4 Cup oil
1 small can undrained Mandarin Oranges
4 eggs

FROSTING
1 large can crushed pineapple
1 large box Vanilla Instant Pudding
1 large container of Cool Whip


CAKE:
Mix cake mix and sugar well. Add eggs one at a time. Add oranges and oil, beat well. Place in a 4-layer prepared cake pans or one cake sheet, or one bundt pan. May also be made into miniature cake pans, divide as necessary. Cool and frost with frosting below.

Directions:

Bake at 350° for 15 minutes for 4 layers or 30 minutes for the sheet or bundt cakes, cook until done and turns loose from sides of pans.

FROSTING:
Mix pineapple with pudding and let set for 15 minutes, fold in Cool Whip and frost.

Frosting can be mixed ahead of time and store in refrigerator, be sure to keep in closed container so it won't dry out.
