Chinese Pepper Steak

Description:
This is one of my sons favorite dishes.

Ingredients:
1 lb. round steak (any steak)
1/4 cup oil
1 clove garlic
1/2 cup onion - diced
2 cups bell pepper - diced
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ginger
1 Tablespoon cornstarch
1 cup stock or bouillon
1 Tablespoon soy sauce
Hot cooked rice

Directions:
Cut steak into strips about 2 inches long,
then cut diagonally across the grain into thin strips.
Heat oil in skillet over medium heat,
cook meat and garlic, turn as needed until brown.
Add onions, bell pepper, salt, pepper and ginger,
cook over medium heat, stirring constantly until tender.
Combine cornstarch with stock and soy sauce, stir mixture in skillet.
Bring to a boil and cook, stirring constantly,
until mixture becomes thick and clear.

Serve immediately over hot cooked rice.
