Smothered Liver and Onions
Description:
This is really good, tender and easy to fix. A very good source of iron!
I use to fix this every Wednesday for my sister Jutz,
and she would come over and eat before we would go bowling.
Ingredients:
2 pounds Beef Liver
2 CANS Campbells Onion Soup
1 Onion (sliced)
Vegetable Oil
Flour
Salt
Pepper
Directions:
In cold water, rinse liver off. Salt and pepper liver, then dip in flour.
In a skillet, brown a few pieces at a time in small amount of vegetable oil.
When all of the liver has been browned, drain off any oil left in skillet.
Pour the cans of onion soup in skillet, add 1/2 can of water, mix well.
Layer Liver back in the skillet, Lay slices of onion on top.
Cover and simmer over low heat for 30 minuter or until tender.
Juice makes the gravy.
