Grilled Quesadillas

Description:
Method: On grill, over hot coals.
Ingredients:
8 tortillas
2 cup Monterey Jack cheese, shredded
2 Tablespoon onion, finely chopped
1 Tablespoon garlic, finely chopped (optional)
2 Tablespoon tomatoes, finely chopped
1 Hot Pepper, finely chopped (optional)
Salt and pepper to taste
Directions:
Mix all together in a bowl, except for tortillas.
Prepare the grill by lightly oiling the grill rack and placing it about 4 inches above
the coals. Over medium heat, grill the tortillas on one side for about 1 minute.
Turn over and sprinkle 4 of the tortillas with the mixed ingredients. Lay the
other 4 tortillas on top of the filled tortillas. Cover loosely with heavy-duty foil
(or the grill hood) and cook until cheese melts (about 1 minute), checking to
make sure the tortillas do not burn. To serve, remove from grill and cut into
wedges. Serve with refried beans, salsa, guacamole, or sour cream.
Hint: In place of the tomatoes use salsa!
