Fried Poke Sallet


Description:
Pick ONLY young small poke leaves with no bug holes.
The larger ones are bitter and if there is any red they are poisonous.

Ingredients:
Poke sallet
Salt to taste
1/2 cup vegetable oil
6 eggs

Directions:
Wash poke sallet leaves in sink with warm water. Put in big pot and boil
until it changes color and is tender. Watch carefully, it will boil over.
Rinse in cold water until it rinses clean and clear. Add salt.
In a skillet add 1/2 cup oil and let it cook down. In a bowl mix eggs well.
Add eggs to skillet, scramble all up together until the eggs are done.

If you don't have poke where you live, you can use spinach.
