Mom's Giblet Gravy


Ingredients:

Giblets (boiled & diced, save broth)
Eggs (boiled & diced)
Turkey Broth (cool)
Corn Starch
Salt
Pepper


Directions:

Clean Giblets, place in pan of water and boil until tender.
Spoon out giblets, reserve broth.
Let giblets cool, then cut into bit size pieces.
Boil eggs, peel and diced into bite size pieces.
Make a thin paste of cooled turkey broth and cornstarch.
Bring giblet broth to a boil, turn fire to low.
Add paste to thicken, a little at a time while stirring.
Add eggs, giblets, salt and pepper to taste.
Cook over low fire until giblets are hot.


This is great over cornbread dressing and mashed potatoes.
