Potato Pancakes
Description:
My parents grew up during the depression days and they wasted nothing.
This is how they used up the mashed potatoes, from last night!
Ingredients:
Mashed Potatoes:
Potatoes
Butter
Milk
Salt
Pepper
Add This to Mashed Potatoes:
Flour
egg
Directions:
Making Mashed Potatoes:
Peel Potatoes, rinse them off. Cut into quarters, place in large pan of water.
Bring to a boil and cook until Potatoes are tender. Drain.
Add a little milk and butter, smash with a Potato mashier or use electric mixer,
Whip until there are no lumps! Salt and pepper to taste.
Add a egg or two to mashed potatoes and then add enough flour to hold it together.
Mix well, heat a small amount of oil in skillet and drop by spoonful in oil, flatten out,
pan fry until golden brown, flip and brown other side, serve while warm.
*You can add diced onion or corn, what ever you like!
