Refried Beans
Description:
Ingredients:
3-4 tablespoons bacon drippings
4 cups cooked pinto beans
3 cloves garlic, finely minced
1 small onion, finely minced
salt to taste
3/4 cup grated Monterey Jack cheese
Directions:
Heat the bacon drippings in a heavy skillet over low heat.
Add the beans and a little liquid (from their cooking liquid, if possible),
and mash them with a potato masher or a fork, until they are thoroughly crushed.
Add the garlic, onion, and salt.
Raise heat to medium and cook for 20-30 minutes,
until the beans are thoroughly heated and the edges are crispy.
Serve piping hot, with the cheese for garnish.
Number Of Servings: 6-8 servings.
